Blueberry Muffins…Yum Yum!

Okay…Skylar made the yummiest blueberry muffins EVER the other day!  And I don’t usually like blue berry muffins…Especially home-made ones.  Oh, but these were so satisfying.  *sign*

And then, out of the oven pops a tray of apple kamut muffins!  (I did not get the pleasure of trying one though)

They just looks so pretty!

Alright.  Enough about muffins!  (My tummy is grumbling)

Again, I wish I could pop a scrumptious muffin into your mouths, but, alas, you can’t teleport things out of the computer screen, yet! 🙂

Well then!  So all of you can have an opportunity to taste one, I am going to post the recipe below.  (Made with whole-grains.  Skylar made up this particular recipe)  Good Luck!

  • 7 Tbsp. Softened butter
  • 2/3 cup honey
  • 1 egg
  • 1  1/2 cups flour
  • 1/2 tsp. baking powder
  • 1/2tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/4-1/2 tsp. cinnamon
  • 1/2 cup buttermilk
  • 1  1/2 tsp. vanilla
  • 2/3-3/4 cup frozen mini blueberries
Preheat over to 350*. Line 9 muffin cups with muffin liners and spray them with cooking spray.
In a small bowl, combine and whisk together dry ingredients.
With electric mixer (or spoon) briskly stir honey & softened butter together. Add egg  and vanilla.
Alternately add flour mixture & buttermilk mixture to butter and honey mixture. Stir until fully combined.
Add blueberries. Divide evenly between the 9 muffin cups. Bake for 20 minutes.
Enjoy!!!
*Note: A little extra yumminess…Melt about 5 Tbsp. of butter and put 2/3 cup of sugar and 2 tsp. cinnamon in a separate bowl.  When the muffins have cooled off, dip the top of a muffin in the butter then dip it in the cinnamon sugar…Mmmmmm! 😀
